Behind the Food
Hello, I am Chelsea Click, owner of South Concho Food Co.
I am a proud South Texas native, now rooted in Christoval, where I live with my husband, our two little ones, and our two dogs. I graduated in 2018 as a Registered Dental Hygienist, but my true passion has always been in the kitchen.
My journey into cooking started more than 20 years ago, when I was diagnosed with Celiac Disease. Overnight, dining out became a challenge—I couldn’t find meals that were both safe and satisfying. That experience sparked a mission: to recreate all my favorite foods in a way that was not only gluten-free, but also full of flavor. Over the years, I’ve developed recipes that became family favorites, and now I’m honored to share them with you.
Cooking—and creating—is one of my greatest joys. Along the way, additional autoimmune diagnoses led me to transition to a dairy-free lifestyle as well. Today, about 90% of our menu is dairy-free, and every dish is made from scratch with care. We’re also happy to adapt meals to fit other dietary needs, because no one should feel left out at the table.
At South Concho Food Co., we believe that nothing tastes better than home-cooked food made with love. My dream is simple: if I can help even one person with similar dietary restrictions feel included and excited about food again, then I’ve done what I set out to do.
